  • 2 tablespoons olive oil
  • 3 tablespoons lime juice, divided
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 ripe mangoes, diced
  • 1/2 red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 1 jalapeño, seeds removed and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil (for salsa)
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix olive oil, 2 tablespoons lime juice, garlic, honey, cumin, paprika, salt, and pepper to create the marinade.
  2. Place chicken in a shallow dish and pour marinade over. Cover and refrigerate for at least 30 minutes (up to 4 hours).
  3. While chicken marinates, prepare the mango salsa by combining diced mango, bell pepper, red onion, jalapeño, cilantro, remaining 1 tablespoon lime juice, and olive oil in a bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.
  4. Preheat grill to medium-high heat (about 400°F). Oil the grates lightly to prevent sticking.
  5. Remove chicken from marinade and grill for 5-6 minutes per side, or until internal temperature reaches 165°F.
  6. Let chicken rest for 5 minutes before serving, then top with the fresh mango salsa.

Notes

  • For best flavor, choose ripe mangoes that yield slightly to pressure.
  • You can prepare the mango salsa up to 4 hours ahead and keep refrigerated.
  • If you don’t have a grill, you can use a grill pan or bake the chicken at 425°F for about 20-25 minutes.
  • To add more heat to the salsa, include some jalapeño seeds.
