- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp cayenne pepper
- 1 tsp paprika
- 2 ears of corn or 1½ cups frozen corn kernels
- 1 jalapeño, seeded and diced
- 1 avocado, diced
- ¼ cup red onion, finely diced
- ¼ cup fresh cilantro, chopped
- 1 lime, juiced
- 2 cups cooked rice or quinoa
- ½ cup Greek yogurt
- 1 tbsp lime juice
- 1 clove garlic, minced
Instructions
- In a bowl, combine shrimp with olive oil, minced garlic, cayenne pepper, and paprika. Marinate for 15-30 minutes.
- Prepare the charred corn salsa by grilling corn until lightly charred. Cut kernels from cob and mix with diced jalapeño, red onion, cilantro, and lime juice.
- Make the creamy garlic sauce by combining Greek yogurt, lime juice, and minced garlic.
- Grill marinated shrimp for 2-3 minutes per side until pink and cooked through.
- Assemble bowls with rice or quinoa, grilled shrimp, charred corn salsa, diced avocado, and drizzle with creamy garlic sauce.
Notes
- For a spicier version, add more cayenne pepper or leave some seeds in the jalapeño.
- This recipe works well with grilled chicken or tofu as alternatives to shrimp.
