Ingredients

- 2 lbs flank or skirt steak
- 4 ears of corn, grilled and kernels removed
- 12 corn tortillas
- 1/2 cup Mexican crema or sour cream
- 1/2 cup cotija cheese, crumbled
- 1 jalapeño, finely diced
- 1/4 cup mayonnaise
- 1 lime, juiced
- 1 teaspoon cayenne pepper
- 2 tablespoons cilantro, chopped
- Salt and pepper to taste
Instructions
- Marinate and grill the steak to desired doneness
- Grill corn until charred, then cut kernels off the cob
- Mix corn kernels with crema, mayonnaise, cotija, jalapeño, and seasonings
- Slice steak against the grain
- Warm tortillas
- Assemble tacos with steak and elote mixture
- Garnish with additional cotija and cilantro

- For dairy-free version, use coconut yogurt and dairy-free cheese
