- 2 pounds flank or skirt steak
- 12 corn tortillas
- For the Chimichurri Sauce:
- 1 cup fresh parsley, finely chopped
- 1/2 cup fresh cilantro, finely chopped
- 3–4 cloves garlic, minced
- 1 jalapeño, seeded and minced
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- Salt and pepper to taste
- Optional toppings: diced onions, lime wedges, additional cilantro
Instructions
- Season the steak generously with salt and pepper.
- Prepare the chimichurri sauce by combining all sauce ingredients in a bowl.
- Preheat grill to high heat.
- Grill steak 4-5 minutes per side for medium-rare.
- Let steak rest for 10 minutes, then slice against the grain.
- Warm tortillas on the grill.
- Assemble tacos with sliced steak, chimichurri sauce, and desired toppings.

- Make chimichurri sauce ahead for better flavor development.
