- 4 venison sausages
- 2 bell peppers, sliced
- 1 red onion, cut into wedges
- 2 zucchini, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 3 tablespoons honey
- 1 tablespoon fresh thyme leaves
- 1 teaspoon lemon juice
Instructions
- Preheat grill to medium-high heat (or oven to 425°F if cooking indoors).
- Toss all vegetables with olive oil, salt, and pepper in a large bowl.
- Place vegetables in a grill basket or on a foil-lined sheet pan if using the oven.
- Grill vegetables for about 15-20 minutes, stirring occasionally, until tender and slightly charred. If using the oven, roast for about 25 minutes, turning halfway through.
- While vegetables cook, grill the venison sausages for 8-10 minutes, turning occasionally, until internal temperature reaches 160°F. If using the oven, cook them for 15-20 minutes, turning once.
- For the honey thyme drizzle, mix honey, thyme leaves, and lemon juice in a small bowl.
- Serve the grilled sausages over the roasted vegetables and drizzle with the honey thyme mixture.
Notes
- Venison sausages are leaner than traditional pork sausages, so be careful not to overcook them.
- Feel free to substitute any seasonal vegetables you have on hand.
- For extra flavor, add a splash of balsamic vinegar to the honey thyme drizzle.
