Ingredients

  • 1 pound ground beef
  • 1 cup onion, chopped
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 soft tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and cook until softened, about 3-5 minutes.
  3. Add the ground beef, garlic powder, cumin, salt, and pepper. Cook until the beef is browned and fully cooked through, approximately 7-10 minutes.
  4. Spread a portion of enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and some shredded cheese, then roll and place them seam-side down in the dish.
  6. Pour the remaining enchilada sauce over the tortillas and sprinkle with the rest of the cheese.
  7. Bake for 20-25 minutes or until the cheese is bubbly and golden.
  8. Serve warm and enjoy.
