- 1 pound ground beef
- 1 cup onion, chopped
- 2 cups enchilada sauce
- 2 cups shredded cheese (cheddar or Mexican blend)
- 8 soft tortillas
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add onions and cook until softened, about 3-5 minutes.
- Add the ground beef, garlic powder, cumin, salt, and pepper. Cook until the beef is browned and fully cooked through, approximately 7-10 minutes.
- Spread a portion of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the beef mixture and some shredded cheese, then roll and place them seam-side down in the dish.
- Pour the remaining enchilada sauce over the tortillas and sprinkle with the rest of the cheese.
- Bake for 20-25 minutes or until the cheese is bubbly and golden.
- Serve warm and enjoy.
