A hearty and flavorful meal prep featuring ground beef, sautéed peppers, onions, and melted cheese, perfect for busy weeknights.
Ingredients

- 3 lbs lean ground beef
- 2 medium green bell peppers, diced
- 2 small onions, sliced
- 4 cups sliced mushrooms
- 4 tsp seasoned soy sauce
- ½ cup beef broth
- 2 cups shredded Colby Jack or provolone cheese
- 4 cups cooked basmati rice
Instructions
- If the rice is uncooked, prepare according to package instructions and set aside.
- In a large skillet over medium heat, sauté onions, peppers, and mushrooms for 5-7 minutes until soft and slightly caramelized. Remove and set aside.
- In the same skillet, cook ground beef until browned. Drain excess fat.
- Stir in seasoned soy sauce and beef broth. Simmer for 2-3 minutes before adding veggies back into the mixture.
- Mix everything well and sprinkle cheese evenly over the mixture. Cover and cook on low until the cheese melts.
- Divide the cooked rice and the cheesesteak mixture into eight containers for meal prep.
Notes
For best results, use fresh vegetables and don’t rush the sautéing process to develop rich flavors.
