Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/2 cup mashed banana
  • 1/3 cup maple syrup
  • 1/4 cup almond butter
  • 1 egg (or flax egg for vegan option)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup M&Ms (or vegan chocolate chips)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine rolled oats and almond flour.
  3. In another bowl, mix mashed banana, maple syrup, almond butter, egg (or flax egg), and vanilla extract.
  4. Add the wet ingredients to the dry ingredients, along with cinnamon, baking soda, and salt. Mix until well combined.
  5. Fold in the M&Ms or chocolate chips.
  6. Scoop approximately 2 tablespoons of dough for each cookie onto the prepared baking sheet.
  7. Flatten cookies slightly with the back of a spoon as they won’t spread much during baking.
  8. Bake for 10-12 minutes or until edges are golden brown.
  9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. Store in an airtight container for up to 5 days or freeze for longer storage.

Notes

  • For a gluten-free version, use certified gluten-free oats.
  • Replace the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water) for a vegan option.
  • These cookies don’t spread much while baking, so shape them as you want them to look when baked.
  • They freeze well for up to 3 months – perfect for meal prep!
