Ingredients

  • 1 cup rolled oats (uncooked)
  • 1/4 cup flour (can use wheat flour or sub with almond, coconut or GF blend flour)
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp coconut oil
  • 2 eggs
  • 1/4 cup maple syrup
  • 1/4 cup peanut butter (crunchy or creamy)
  • 1/2 tsp vanilla
  • 1/3 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line an 8×8-inch pan with parchment paper.
  2. Mix together the oats, flour, cinnamon, baking powder, baking soda, and salt in a medium bowl. Set aside.
  3. Melt the coconut oil in a microwave-safe bowl for 15-20 seconds. Beat in the eggs, then add the maple syrup, peanut butter, and vanilla. Mix until combined.
  4. Pour the wet ingredients into the dry mixture and combine until just blended.
  5. Use a rubber spatula to fold in the chocolate chips.
  6. Spread the mixture evenly into the pan.
  7. Bake for 20-25 minutes or until golden brown.
  8. Allow cooling before cutting into bars. Store in an airtight container on the counter for up to 3-5 days.

Notes

For extra flavor, try toasting the oats before mixing. For different flavors, you can swap chocolate chips for dried fruit.
