  • 1/2 cup (120 ml) unsweetened applesauce (120 milliliters)
  • 1/2 cup (120 ml) vegetable oil (120 milliliters)
  • 1 cup (240 ml) granulated sugar (200 grams)
  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)
  • 1 1/2 cups (360 ml) grated zucchini, lightly packed (about 200 grams)
  • 1/2 cup (120 ml) chopped walnuts (optional) (60 grams)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan or line it with parchment paper.
  3. In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In another bowl, whisk together the applesauce, vegetable oil, and sugar.
  5. Add the eggs and vanilla extract to the wet ingredients and mix well.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Gently fold in the grated zucchini.
  8. If using, fold in the chopped walnuts.
  9. Pour the batter into the prepared loaf pan, spreading it evenly.
  10. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  11. Let the bread cool in the pan for about 10 minutes.
  12. Remove the bread from the pan and let it cool completely on a wire rack.
