Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup coconut sugar
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup almond milk
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • Cooking spray or a small amount of oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin.
  2. Mix together the whole wheat flour, coconut sugar, cinnamon, baking powder, and salt in a bowl.
  3. Combine the almond milk, applesauce, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.
  6. Bake for 12-15 minutes or until golden brown.
  7. Allow to cool for a few minutes, then remove from the tin.
  8. Toss the warm churro bites in a mixture of cinnamon and coconut sugar before serving.

Notes

For best results, use fresh spices and adjust coconut sugar to taste. Allow bites to cool before tossing in cinnamon-sugar.
