Ingredients

- 1 cup whole wheat flour
- 1/2 cup coconut sugar
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup almond milk
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- Cooking spray or a small amount of oil for greasing
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin.
- Mix together the whole wheat flour, coconut sugar, cinnamon, baking powder, and salt in a bowl.
- Combine the almond milk, applesauce, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.
- Bake for 12-15 minutes or until golden brown.
- Allow to cool for a few minutes, then remove from the tin.
- Toss the warm churro bites in a mixture of cinnamon and coconut sugar before serving.
Notes
For best results, use fresh spices and adjust coconut sugar to taste. Allow bites to cool before tossing in cinnamon-sugar.
