Ingredients

  • 1 1/2 cups (180g) white whole wheat flour
  • 1 tsp (5ml) baking soda
  • 1/2 tsp (2.5ml) salt
  • 1 1/2 tsp (7.5ml) cinnamon
  • 1/4 tsp (1.25ml) nutmeg
  • 2 eggs
  • 3/4 cup (180ml) melted coconut oil
  • 1/2 cup (120ml) maple syrup
  • 1/2 cup (120ml) Greek yogurt (using one with fat will yield more moist result, I use 2% plain)
  • 1 tsp (5ml) vanilla
  • 1 1/2 cups (225g) grated zucchini (skin left on, grated and excess water squeezed out if very wet)
  • 1 cup (175g) chocolate chips – saving extra to sprinkle on top.

Instructions

  1. Preheat your oven to 350°F and apply a layer of grease to a bread pan. Additionally, consider lining the bottom with parchment paper for easy removal.
  2. In a small bowl, mix together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate, larger bowl, beat the eggs. Then incorporate the coconut oil, maple syrup, Greek yogurt, and vanilla.
  4. Gradually blend the dry mixture into the wet mixture, stirring until they are well combined.
  5. Gently mix in the grated zucchini and chocolate chips, making sure not to overdo it.
  6. Transfer the batter into the prepared bread pan and, if you like, scatter some extra chocolate chips on the top.
  7. Place in the oven and bake for 45-50 minutes, or until a toothpick inserted into the center emerges clean.
