- 1 1/2 cups (180g) white whole wheat flour
- 1 tsp (5ml) baking soda
- 1/2 tsp (2.5ml) salt
- 1 1/2 tsp (7.5ml) cinnamon
- 1/4 tsp (1.25ml) nutmeg
- 2 eggs
- 3/4 cup (180ml) melted coconut oil
- 1/2 cup (120ml) maple syrup
- 1/2 cup (120ml) Greek yogurt (using one with fat will yield more moist result, I use 2% plain)
- 1 tsp (5ml) vanilla
- 1 1/2 cups (225g) grated zucchini (skin left on, grated and excess water squeezed out if very wet)
- 1 cup (175g) chocolate chips – saving extra to sprinkle on top.
Instructions
- Preheat your oven to 350°F and apply a layer of grease to a bread pan. Additionally, consider lining the bottom with parchment paper for easy removal.
- In a small bowl, mix together the flour, baking soda, salt, cinnamon, and nutmeg.
- In a separate, larger bowl, beat the eggs. Then incorporate the coconut oil, maple syrup, Greek yogurt, and vanilla.
- Gradually blend the dry mixture into the wet mixture, stirring until they are well combined.
- Gently mix in the grated zucchini and chocolate chips, making sure not to overdo it.
- Transfer the batter into the prepared bread pan and, if you like, scatter some extra chocolate chips on the top.
- Place in the oven and bake for 45-50 minutes, or until a toothpick inserted into the center emerges clean.
