  • 2 eggs
  • 3/4 cup (180 ml) unsalted creamy peanut butter
  • 3/4 cup (180 ml) almond flour
  • 1/2 cup (120 ml) vanilla protein powder
  • 1 tsp (5 ml) baking soda
  • 1/2 cup (120 ml) chocolate chips
  • 1/4 tsp (1 ml) salt* omit if peanut butter is salted
  • Sea salt for topping

Instructions

  1. Begin by setting your oven to 350°F. Generously coat a muffin tray with nonstick spray or place nonstick baking cups inside.
  2. In a mixing bowl, combine the mashed bananas, eggs, and peanut butter. Mix well.
  3. Incorporate the almond flour, protein powder, and baking soda into the mixture. Blend thoroughly.
  4. Gently mix in the chocolate chips.
  5. Transfer the batter into the baking cups, filling each about two-thirds full.
  6. Place in the oven and bake for 17-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Once done, take the muffins out of the oven. Let them sit in the pan for 10 minutes before carefully removing them.
