- 1 1/4 cup (300 ml) mashed bananas
- 2 eggs
- 3/4 cup (180 ml) unsalted creamy peanut butter
- 3/4 cup (180 ml) almond flour
- 1/2 cup (120 ml) vanilla protein powder
- 1 tsp (5 ml) baking soda
- 1/2 cup (120 ml) chocolate chips
- 1/4 tsp (1 ml) salt* omit if peanut butter is salted
- Sea salt for topping
Instructions
- Begin by setting your oven to 350°F. Generously coat a muffin tray with nonstick spray or place nonstick baking cups inside.
- In a mixing bowl, combine the mashed bananas, eggs, and peanut butter. Mix well.
- Incorporate the almond flour, protein powder, and baking soda into the mixture. Blend thoroughly.
- Gently mix in the chocolate chips.
- Transfer the batter into the baking cups, filling each about two-thirds full.
- Place in the oven and bake for 17-20 minutes or until a toothpick inserted into the center comes out clean.
- Once done, take the muffins out of the oven. Let them sit in the pan for 10 minutes before carefully removing them.
Notes
- Use sugar-free or dark chocolate chips for a healthier alternative.
- Make sure the bananas are ripe to enhance the sweetness of the muffins.
- Adjust sweetness by experimenting with different flavored protein powders.
