Ingredients

  • – 2 cups (480 ml) zucchini, large size hole shredded (not tightly packed)
  • – 1 large egg
  • – 1/2 cup (120 ml) vegetable oil, melted
  • – 1/2 cup (120 ml) honey or any liquid sweetener
  • – 1 teaspoon (5 ml) pure vanilla extract
  • – 1/2 cup (60 g) cacao or cocoa powder
  • – 1/2 teaspoon (3 ml) baking soda
  • – 1/4 teaspoon (1 ml) salt
  • – 1 cup (120 g) whole wheat or spelt flour

Instructions

  1. Place the shredded zucchini in a strainer while you prepare the other ingredients.
  2. Heat the oven to 375°F and line an 8 x 8-inch glass baking dish with parchment paper. Set this aside.
  3. In a sizable mixing bowl, combine the egg, melted vegetable oil, honey, and vanilla extract. Whisk these ingredients together.
  4. Incorporate the cocoa powder, baking soda, and salt into the mixture, whisking until everything is well blended.
  5. Gently squeeze the zucchini to remove excess moisture, but don’t dry it out completely. Add it to the mixture and stir.
  6. Fold in the flour, mixing gently until everything is well incorporated.
  7. Pour the mixture into the prepared baking dish and smooth the top using a spatula. Bake for 25 to 28 minutes, ensuring the center remains slightly wobbly. Avoid overbaking to prevent a cake-like texture. A toothpick inserted should come out with some residue. If the center seems too unstable, bake a bit longer, as oven performance may differ.
  8. Take the dish out of the oven and allow it to cool for around an hour. Use the parchment paper edges to lift and transfer the brownies onto a cooling rack to cool completely. Slice into 16 squares and enjoy!
