Ingredients
- – 2 cups (480 ml) zucchini, large size hole shredded (not tightly packed)
- – 1 large egg
- – 1/2 cup (120 ml) vegetable oil, melted
- – 1/2 cup (120 ml) honey or any liquid sweetener
- – 1 teaspoon (5 ml) pure vanilla extract
- – 1/2 cup (60 g) cacao or cocoa powder
- – 1/2 teaspoon (3 ml) baking soda
- – 1/4 teaspoon (1 ml) salt
- – 1 cup (120 g) whole wheat or spelt flour
Instructions
- Place the shredded zucchini in a strainer while you prepare the other ingredients.
- Heat the oven to 375°F and line an 8 x 8-inch glass baking dish with parchment paper. Set this aside.
- In a sizable mixing bowl, combine the egg, melted vegetable oil, honey, and vanilla extract. Whisk these ingredients together.
- Incorporate the cocoa powder, baking soda, and salt into the mixture, whisking until everything is well blended.
- Gently squeeze the zucchini to remove excess moisture, but don’t dry it out completely. Add it to the mixture and stir.
- Fold in the flour, mixing gently until everything is well incorporated.
- Pour the mixture into the prepared baking dish and smooth the top using a spatula. Bake for 25 to 28 minutes, ensuring the center remains slightly wobbly. Avoid overbaking to prevent a cake-like texture. A toothpick inserted should come out with some residue. If the center seems too unstable, bake a bit longer, as oven performance may differ.
- Take the dish out of the oven and allow it to cool for around an hour. Use the parchment paper edges to lift and transfer the brownies onto a cooling rack to cool completely. Slice into 16 squares and enjoy!
