  • 1 ripe mashed banana (or you can use 1/4 cup (60 ml) unsweetened applesauce)
  • 1/2 cup (120ml) unsweetened vanilla almond milk
  • 1/2 cup (90g) regular or mini chocolate chips, dairy free if desired

Instructions

  1. Set your oven to a temperature of 350 degrees Fahrenheit. Prepare a 12-cup muffin tray by inserting cupcake liners and spraying them thoroughly with nonstick spray.
  2. Use a paper towel to remove any excess moisture from the shredded zucchini. This step is crucial, so ensure it’s done.
  3. In a medium-sized bowl, combine the flour, cocoa powder, baking soda, and salt by whisking them together; then put the mixture aside.
  4. In the bowl of a stand mixer, combine the olive oil, maple syrup, vanilla, and egg; mix on medium-low speed until the mixture is smooth and well blended. Incorporate the zucchini, mashed banana (or applesauce), and almond milk; mix once more. Gradually add the dry ingredients, stirring until just combined. Carefully fold in the chocolate chips.
  5. Distribute the batter equally among the lined muffin cups. Bake for 22 to 25 minutes, or until a toothpick inserted into the center comes out clean. After allowing the muffins to cool for 5 minutes, transfer them to a wire rack to cool completely. Enjoy your treat!
