- 1 ripe mashed banana (or you can use 1/4 cup (60 ml) unsweetened applesauce)
- 1/2 cup (120ml) unsweetened vanilla almond milk
- 1/2 cup (90g) regular or mini chocolate chips, dairy free if desired
Instructions
- Set your oven to a temperature of 350 degrees Fahrenheit. Prepare a 12-cup muffin tray by inserting cupcake liners and spraying them thoroughly with nonstick spray.
- Use a paper towel to remove any excess moisture from the shredded zucchini. This step is crucial, so ensure it’s done.
- In a medium-sized bowl, combine the flour, cocoa powder, baking soda, and salt by whisking them together; then put the mixture aside.
- In the bowl of a stand mixer, combine the olive oil, maple syrup, vanilla, and egg; mix on medium-low speed until the mixture is smooth and well blended. Incorporate the zucchini, mashed banana (or applesauce), and almond milk; mix once more. Gradually add the dry ingredients, stirring until just combined. Carefully fold in the chocolate chips.
- Distribute the batter equally among the lined muffin cups. Bake for 22 to 25 minutes, or until a toothpick inserted into the center comes out clean. After allowing the muffins to cool for 5 minutes, transfer them to a wire rack to cool completely. Enjoy your treat!
