Ingredients

  • – 1 Tbsp olive oil (15g)
  • – 1 small yellow onion (150g) finely diced
  • – 2 lb. (900g) boneless skinless chicken breast
  • – 2 15-oz. cans white beans, rinsed & drained (like white kidney beans, cannellini, Great Northern beans)
  • – 2 4-oz. cans diced green chiles
  • – 1 jalapeno, seeds removed and finely diced (can omit)
  • – 2 1/2 cups (600g) chicken stock
  • – 5 cloves garlic, minced
  • – 1 Tbsp (15 ml) EACH: Italian seasoning & ground cumin
  • – 1 1/2 tsp (8 ml) EACH: salt & paprika
  • – 1 1/4 cups (170g) frozen corn
  • – 4 oz. (56g) reduced-fat cream cheese, softened
  • – 1/2 cup (120 ml) chopped fresh cilantro (can omit)
  • – Toppings: shredded cheese, tortilla strips, sour cream, etc.

Instructions

  1. Place all the ingredients, excluding the cream cheese and cilantro, into the Crockpot and gently mix them together.
  2. Secure the lid and let it cook on low heat for 5 to 6 hours or on high heat for 3 to 4 hours.
  3. Once it’s ready, take out the chicken and place it on a plate. Use an immersion blender to blend about one-third of the chili to make it thicker, keeping some beans intact.
  4. If you lack an immersion blender, you can transfer a few scoops of the chili to a food processor or blender, pulse a few times, and then return the mixture to the Crockpot.
  5. Pull the chicken apart using two forks and return it to the Crockpot, mixing it with the white bean mixture. Then, incorporate the cream cheese and cilantro by stirring them in.
  6. Dish it out and garnish with sour cream, shredded cheese, tortilla strips, or any other toppings you prefer, and enjoy your meal!

  • Soften the cream cheese before adding for a creamy texture.
  • Leave jalapeno seeds or add cayenne pepper for extra heat.
