Ingredients

- 5–6 mini seedless cucumbers
- 2 tbsp soy sauce or coconut aminos
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp chili garlic sauce
- 2 stems of green onion
- 1 tbsp sesame seeds
- 1 clove garlic
- 1 tsp sesame oil
- 1/2 inch grated ginger (optional)
Instructions
- Slice the cucumbers into thin rounds.
- In a large bowl, whisk together soy sauce (or coconut aminos), rice vinegar, honey, chili garlic sauce, sesame oil, and grated ginger.
- Add the sliced cucumbers and toss to coat evenly.
- Chop the green onions and add them to the salad.
- Mince the garlic and mix it in along with the sesame seeds.
- Let the salad chill in the refrigerator for about 15 minutes before serving.
Notes
For a less watery salad, consider lightly salting the cucumber slices before mixing them with the dressing. Experiment with additional herbs or toasted sesame seeds for unique flavors.
