Ingredients

  • 56 mini seedless cucumbers
  • 2 tbsp soy sauce or coconut aminos
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp chili garlic sauce
  • 2 stems of green onion
  • 1 tbsp sesame seeds
  • 1 clove garlic
  • 1 tsp sesame oil
  • 1/2 inch grated ginger (optional)

Instructions

  1. Slice the cucumbers into thin rounds.
  2. In a large bowl, whisk together soy sauce (or coconut aminos), rice vinegar, honey, chili garlic sauce, sesame oil, and grated ginger.
  3. Add the sliced cucumbers and toss to coat evenly.
  4. Chop the green onions and add them to the salad.
  5. Mince the garlic and mix it in along with the sesame seeds.
  6. Let the salad chill in the refrigerator for about 15 minutes before serving.

Notes

For a less watery salad, consider lightly salting the cucumber slices before mixing them with the dressing. Experiment with additional herbs or toasted sesame seeds for unique flavors.
