Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large mixing bowl, combine 1 cup mashed ripe bananas, 1/2 cup creamy peanut butter, 1/2 cup honey or maple syrup, 1/4 cup unsweetened applesauce, and 1 teaspoon vanilla extract.
- Add 1 large egg to the banana mixture and mix until well combined.
- Sift 1/3 cup unsweetened cocoa powder, 1 cup whole wheat flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/4 teaspoon salt into the wet ingredients.
- Gently fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.
- Stir in 1/2 cup dark chocolate chips or chunks until evenly distributed throughout the batter.
- Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
- Drop small dollops of the remaining peanut butter on top of each muffin and use a toothpick or knife to swirl it into the batter.
- Bake the muffins in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
