- 1 cup (240 ml) creamy peanut butter (no added sugar)
- 1 cup (240 ml) plain Greek yogurt
- 1 tablespoon (15 ml) vanilla extract
- 1/4–1/3 cup (80 ml) honey
- 24 ounce (680 g) s semi-sweet or dark chocolate, chopped
- 2 tablespoon (30 ml) coconut oil
- Flaky sea salt (optional )
Instructions
- Place paper liners in a muffin tray. Heat the chocolate and coconut oil together in a microwave until melted. Add 2 teaspoons of the chocolate mixture to each liner. Put in the freezer for 5 minutes.
- Combine the Greek yogurt, peanut butter, vanilla extract, and honey in a mixing bowl. Add 1 tablespoon of this yogurt blend to each chocolate-coated liner. Pour the rest of the melted chocolate over the yogurt layer, ensuring it’s fully covered. Optionally, sprinkle some flaky sea salt on top.
- Refrigerate or freeze until the cups become solid, approximately 1 hour. Store them in either the fridge or freezer. They are especially delicious straight from the fridge.
