Ingredients

  • 1 cup (240 ml) creamy peanut butter (no added sugar)
  • 1 cup (240 ml) plain Greek yogurt
  • 1 tablespoon (15 ml) vanilla extract
  • 1/41/3 cup (80 ml) honey
  • 24 ounce (680 g) s semi-sweet or dark chocolate, chopped
  • 2 tablespoon (30 ml) coconut oil
  • Flaky sea salt (optional )

Instructions

  1. Place paper liners in a muffin tray. Heat the chocolate and coconut oil together in a microwave until melted. Add 2 teaspoons of the chocolate mixture to each liner. Put in the freezer for 5 minutes.
  2. Combine the Greek yogurt, peanut butter, vanilla extract, and honey in a mixing bowl. Add 1 tablespoon of this yogurt blend to each chocolate-coated liner. Pour the rest of the melted chocolate over the yogurt layer, ensuring it’s fully covered. Optionally, sprinkle some flaky sea salt on top.
  3. Refrigerate or freeze until the cups become solid, approximately 1 hour. Store them in either the fridge or freezer. They are especially delicious straight from the fridge.
