- 1 cup Greek yogurt (240 ml)
- 2 medium ripe bananas, mashed (1 cup (240 ml) mashed)
- 2 cups rolled oats (480 g)
- 1/4 cup cane sugar (60 g)
- 1 1/2 tsp (8 ml) baking powder
- 1/2 tsp (3 ml) baking soda
- pinch of salt
- 1/2 cup dairy-free chocolate chips (85 g)
Instructions
- Set your oven to 400°F. Ensure your muffin pan is either greased or lined with muffin cups, and lightly oil the insides of the liners to prevent sticking.
- In a blender or food processor, combine all the ingredients EXCEPT FOR THE CHOCOLATE CHIPS, and blend until the mixture is mostly smooth.
- Mix in the chocolate chips using a spoon.
- Pour the mixture into your prepared muffin pan, and optionally sprinkle some additional chocolate chips on top.
- Bake for 15-20 minutes or until the tops begin to turn a light golden brown—avoid overbaking.
- Let the muffins cool in the pan for 10 minutes before transferring them to a cooling rack.
