  • 1 1/2 tsp (7.5 ml) baking powder
  • 1/2 tsp (2.5 ml) baking soda
  • pinch of salt
  • 1/2 cup (120 ml) dairy-free chocolate chips

Instructions

  1. Set your oven to 400°F to warm up. Coat your muffin tin with oil or line it with muffin papers, then lightly spray the liners to prevent sticking.
  2. Place all the ingredients, except for the chocolate bits, into a blender or food processor and blend until mostly smooth.
  3. Use a spoon to incorporate the chocolate pieces into the mixture.
  4. Pour the prepared batter into the muffin tin, and if desired, sprinkle additional chocolate bits on top.
  5. Bake for 15-20 minutes or until the tops begin to turn a light golden color. Avoid overcooking.
  6. Let the muffins cool in the tin for about 10 minutes before transferring them to a cooling rack.
