- 1/2 cup honey or maple syrup (120 ml)
- 1 large egg
- 1 teaspoon (5 ml) vanilla extract
- 2 ripe bananas, mashed
- 1 1/2 cups rolled oats (135 g)
- 1/2 cup whole wheat flour (60 g)
- 1 teaspoon (5 ml) baking powder
- 1/2 teaspoon (3 ml) baking soda
- 1/4 teaspoon (1 ml) salt
- 1/2 cup chocolate chips (90 g)
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper.
- In a large bowl, combine 1 cup of Greek yogurt and 1/2 cup of honey or maple syrup.
- Add 1 large egg and 1 teaspoon of vanilla extract, then mix until smooth.
- Stir in the mashed bananas until well combined.
- In another bowl, mix 1 1/2 cups of rolled oats, 1/2 cup of whole wheat flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in 1/2 cup of chocolate chips.
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cookie bars to cool in the pan on a wire rack.
- Once cooled, cut into bars and serve.
