- 1 cup (240 ml) s all purpose flour 120g
- 1/2 cup (120 ml) unsweetened cocoa powder
- 1/4 cup (60 ml) granulated sugar or sugar subsitute
- 1 tsp (5 ml). baking powder
- 1/2 tsp (3 ml). baking soda
- 1/4 tsp (1 ml). salt
- 2 large eggs
- 1 cup (240 ml) plain Greek yogurt (5% preferred) 224g
- 1/2 cup (120 ml) unsweetened Vanilla almond milk or any milk preferred
- 1/4 cup (60 ml) creamy peanut butter or nut butter
- 1 tsp (5 ml). vanilla extract
- 1/2 cup (120 ml) chocolate chips
Instructions
- Set your oven to 350°F and line a muffin pan with paper liners.
- In one mixing bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt by whisking them together.
- In a separate bowl, whisk the eggs, then incorporate the Greek yogurt, almond milk, peanut butter, and vanilla extract.
- Gently mix the wet ingredients with the dry mixture until just combined, then gently fold in the chocolate chips.
- Distribute the batter evenly, filling each of the 12 muffin cups about three-quarters full.
- Place in the oven and let them bake for 13-15 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffin bars to cool before enjoying them.
- You can choose to add extra chocolate chips on top before baking, swirl more peanut butter on top, or sprinkle with flaky sea salt when serving.
