  • 1/4 cup (48g) brown sugar sweetener (Monk Fruit golden classic)
  • 2 large eggs
  • 2 tsp (10 ml) vanilla extract
  • 1 cup (80g) old fashioned rolled oats
  • 1/2 cup (64g) oat flour
  • 1 tsp (5 ml) baking soda
  • 1/4 tsp (1 ml) salt
  • 1/4 cup (60g) dairy-free chocolate chips (divided)

Instructions

  1. Heat your oven to 350°F and prepare an 8×8” baking dish by lining it with parchment paper.
  2. In a medium bowl, combine the almond butter, both sweeteners, eggs, and vanilla extract, whisking them together thoroughly.
  3. Incorporate the rolled oats, oat flour, baking soda, and salt into the wet mixture using a spatula or spoon until everything is well mixed. Gently fold in half of the chocolate chips.
  4. Pour the batter into the prepared dish, spreading it out evenly. Scatter the remaining chocolate chips over the top.
  5. Place in the oven and bake for 18-20 minutes until the edges are lightly browned. The center may appear slightly undercooked when removed but will firm up as it cools, keeping it soft and gooey.
  6. Allow it to cool for at least 30 minutes before slicing into bars and serving. Enjoy!
