Ingredients

  • 8 oz pasta (penne or rotini)
  • 2 cups mixed vegetables (bell peppers, zucchini, cherry tomatoes)
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook pasta according to package instructions until al dente, then drain.
  3. In a large bowl, combine cooked pasta, mixed vegetables, marinara sauce, olive oil, oregano, garlic powder, salt, and pepper.
  4. Transfer the mixture to a greased baking dish.
  5. Sprinkle mozzarella and feta cheese on top.
  6. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  7. Remove from the oven and let cool for a few minutes.
  8. Garnish with fresh basil before serving.
