- 8 oz pasta (penne or rotini)
- 2 cups mixed vegetables (bell peppers, zucchini, cherry tomatoes)
- 1 cup marinara sauce
- 1 cup mozzarella cheese, shredded
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cook pasta according to package instructions until al dente, then drain.
- In a large bowl, combine cooked pasta, mixed vegetables, marinara sauce, olive oil, oregano, garlic powder, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- Sprinkle mozzarella and feta cheese on top.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes.
- Garnish with fresh basil before serving.
Notes
To enhance flavor, sauté vegetables briefly before combining them with pasta. Experiment with different vegetables and proteins for variation.
