- 1/4 cup almond butter (64 g)
- 1/4 cup honey (85 g)
- 1 teaspoon vanilla extract (5 ml)
- 2 medium ripe bananas, mashed
- 1/2 cup plain Greek yogurt (120 ml)
- 1/2 cup dark chocolate chips (90 g)
- Pinch of salt
Instructions
- Line an 8×8 inch baking dish with parchment paper.
- In a large mixing bowl, combine rolled oats, unsweetened cocoa powder, and a pinch of salt.
- Add almond butter and honey to the dry ingredients.
- Pour in the vanilla extract.
- Add the mashed bananas to the mixture.
- Mix until all ingredients are well combined.
- Stir in the plain Greek yogurt until fully incorporated.
- Fold in the dark chocolate chips.
- Transfer the mixture into the prepared baking dish.
- Press down firmly to create an even layer.
- Cover the dish and refrigerate for at least 2 hours, or until set.
- Once set, remove from the fridge and cut into bars.
