- 3 cups (660 g) peanut butter, smooth
- 1 cup (320 g) honey
- 1/2 tsp (3 ml) salt
- 1 tsp (5 ml) vanilla extract
- 4 cups (480 g) quick oats
- 2 cups (320 g) semi sweet chocolate chips
- 2 1/2 tbsp (35 g) unsalted butter
Instructions
- Coat a 9×13 pan with parchment paper, leaving some extra on the sides to easily lift out the bars for slicing and serving.
- In a large saucepan, combine the peanut butter, honey, and salt. Warm gently over medium-low heat until everything is melted, then continue to heat gently for another 2 minutes, stirring every so often.
- Take the pan off the heat and mix in the vanilla extract. Next, incorporate the oats. Transfer this mixture to your prepared pan and spread it evenly without applying too much pressure to avoid making the bars too dense.
- In a microwave-safe bowl, place the chocolate chips and butter. (Alternatively, you can use a double boiler.) Heat in the microwave for 30-second intervals until melted. Pour the melted chocolate over the oat mixture and use a spatula to spread it evenly, ensuring complete coverage.
- Put the pan in the refrigerator for at least 2 hours to allow the bars to set. Once set, slice them into your preferred sizes and enjoy! Store any leftovers at room temperature for up to a week or in the fridge for up to 10 days. They’re slightly softer at room temperature, which you might prefer.
