  • 3 large ripe bananas, mashed (about 1 1/2 cups (360 ml))
  • 1 cup (240 ml) grated zucchini
  • 2 large eggs
  • 2 tsp (10 ml) pure vanilla extract
  • 1 tsp (5 ml) lemon juice*
  • 1 tsp (5 ml) baking soda
  • 1/2 tsp (2.5 ml) sea salt
  • 2 tsp (10 ml) ground cinnamon

Instructions

  1. Set your oven to 350°F and prepare a 9” x 5” loaf pan by lining it with parchment paper.
  2. Place the oats in a powerful blender or food processor, blending at medium to high speed until they turn into a flour-like consistency, which should take about 20 to 30 seconds. It’s acceptable if the flour has a slightly coarse texture; the main goal is to break down all large oat pieces.
  3. Using a box grater, shred the zucchini and measure out a cup.
  4. In a mixing bowl, mash the bananas.
  5. Incorporate the grated zucchini, eggs, vanilla extract, and lemon juice by whisking them together (these are your wet components). Note: It’s not necessary to squeeze out extra moisture from the zucchini, as the flour content has been adjusted to account for this.
  6. Combine the dry ingredients (oat flour, baking soda, sea salt, and cinnamon) with the wet mixture by stirring until well mixed.
  7. Pour the banana bread mixture into the loaf pan, spreading it evenly.
  8. Bake for 40 minutes, then cover the pan with foil and continue baking for an additional 10 to 15 minutes, or until a toothpick inserted in the center comes out clean.
  9. Once done, take the bread out of the oven and let it cool for at least 30 minutes. Use the edges of the parchment paper to lift the loaf from the pan and transfer it to a cutting board. Slice thick pieces and enjoy!
