- 1/4 cup granulated sugar (50 g)
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix until well combined.
- In a separate bowl, whisk together the whole wheat flour, baking soda, salt, and unsweetened cocoa powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the dark chocolate chips.
- Drop tablespoon-sized scoops of the dough onto a baking sheet lined with parchment paper.
- Flatten each scoop slightly with the back of a spoon or your fingers.
- Bake in the preheated oven for 10-12 minutes or until the edges are firm.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- In a separate bowl, mix together Greek yogurt, peanut butter, and honey until smooth.
- Spread a generous amount of the yogurt mixture onto the flat side of a cooled cookie.
- Top with another cookie, flat side down, to create a sandwich.
- Repeat with remaining cookies and yogurt mixture.
- Place the sandwiches on a baking sheet and freeze for at least 2 hours or until firm.
