- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound cooked chicken breast, shredded
- 2 cans white beans, drained and rinsed
- 4 cups chicken broth
- 1 cup corn (frozen or fresh)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- ½ cup sour cream or Greek yogurt
- Chopped cilantro for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until softened, about 5 minutes.
- Incorporate the minced garlic and allow it to cook for another minute.
- Add the shredded chicken, drained white beans, chicken broth, corn, cumin, and chili powder. Season with salt and pepper.
- Bring to a simmer and cook for about 15 to 20 minutes.
- Stir in the sour cream or Greek yogurt before serving.
- Serve hot, garnished with chopped cilantro.
