- 2 medium zucchinis, sliced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil

Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the minced garlic and sauté for about 30 seconds.
- Add the ground beef, breaking it up with a spatula, and cook until browned.
- Stir in the sliced bell peppers and zucchinis, cooking until they are tender, about 5-7 minutes.
- Add soy sauce, salt, and pepper, stirring to combine.
- Serve hot over rice or on its own.
Notes
For added heat, consider adding sliced jalapeño or red pepper flakes. Use a high smoke point oil for better stir-frying.
