Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the minced garlic and sauté for about 30 seconds.
  3. Add the ground beef, breaking it up with a spatula, and cook until browned.
  4. Stir in the sliced bell peppers and zucchinis, cooking until they are tender, about 5-7 minutes.
  5. Add soy sauce, salt, and pepper, stirring to combine.
  6. Serve hot over rice or on its own.
