- 1 carrot, sliced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste

Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and bell pepper. Sauté until softened, about 5 minutes.
- Stir in the cumin and chili powder, cooking for another minute.
- Add the black beans and vegetable broth, bringing to a boil. Then, reduce heat and let simmer for 15-20 minutes.
- For a smoother texture, use an immersion blender to blend the soup until smooth, if desired.
- Season with salt and pepper to taste and serve hot.
Notes
Customize the soup by adding zucchini or corn. Let it rest overnight for enhanced flavors.
