Ingredients

  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and bell pepper. Sauté until softened, about 5 minutes.
  2. Stir in the cumin and chili powder, cooking for another minute.
  3. Add the black beans and vegetable broth, bringing to a boil. Then, reduce heat and let simmer for 15-20 minutes.
  4. For a smoother texture, use an immersion blender to blend the soup until smooth, if desired.
  5. Season with salt and pepper to taste and serve hot.
