- 1 cup fresh or frozen blueberries
- 1 1/2 cups rolled oats
- 1/2 cup protein powder
- 1/2 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, combine the rolled oats, protein powder, baking powder, baking soda, and salt.
- In another bowl, mix the Greek yogurt, honey (or maple syrup), eggs, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Gently fold in the blueberries.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool for a few minutes before transferring them to a wire rack.
Notes
For a crunchier texture, sprinkle chopped nuts on top before baking.
