Ingredients

  • 1 cup fresh or frozen blueberries
  • 1 1/2 cups rolled oats
  • 1/2 cup protein powder
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine the rolled oats, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the Greek yogurt, honey (or maple syrup), eggs, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Gently fold in the blueberries.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool for a few minutes before transferring them to a wire rack.

Notes

For a crunchier texture, sprinkle chopped nuts on top before baking.
