  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • Pinch of cayenne pepper or smoked paprika (optional)

Instructions

  1. Heat a large pot over medium heat and melt the butter (or olive oil and butter combination).
  2. Add the finely chopped onion and sauté for 5-7 minutes until softened.
  3. Introduce the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant.
  4. Sprinkle the flour over the onions and garlic, stirring continuously for about 1-2 minutes to create a roux.
  5. Gradually whisk in the chicken or vegetable broth, scraping the bottom of the pot to lift any browned bits. Bring to a gentle simmer.
  6. Add the rinsed potato cubes, cover the pot, and simmer for 15-20 minutes or until the potatoes are fork-tender.
  7. Blend half of the soup until smooth and return it to the pot, mixing it with the remaining chunks for a creamy texture.
  8. Lower the heat and stir in the milk, heavy cream (if using), parsley, chives, and thyme. Heat gently for about 5 minutes without boiling.
  9. Off the heat, gradually add the shredded cheddar cheese, stirring until fully melted and adjust the seasoning as necessary.
  10. Serve hot, garnished with your favorite toppings.

Notes

For best results, use freshly shredded cheese and let the soup sit for 30 minutes after cooking to enhance flavors.
