- 1/4 cup all-purpose flour
- 4 cups low-sodium chicken or vegetable broth
- 2 cups whole milk (or half-and-half for added richness)
- 1/2 cup heavy cream (optional)
- 2 cups sharp cheddar cheese, freshly shredded
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon fresh chives, finely chopped
- 1 teaspoon fresh thyme leaves
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- Pinch of cayenne pepper or smoked paprika (optional)
Instructions
- Heat a large pot over medium heat and melt the butter (or olive oil and butter combination).
- Add the finely chopped onion and sauté for 5-7 minutes until softened.
- Introduce the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant.
- Sprinkle the flour over the onions and garlic, stirring continuously for about 1-2 minutes to create a roux.
- Gradually whisk in the chicken or vegetable broth, scraping the bottom of the pot to lift any browned bits. Bring to a gentle simmer.
- Add the rinsed potato cubes, cover the pot, and simmer for 15-20 minutes or until the potatoes are fork-tender.
- Blend half of the soup until smooth and return it to the pot, mixing it with the remaining chunks for a creamy texture.
- Lower the heat and stir in the milk, heavy cream (if using), parsley, chives, and thyme. Heat gently for about 5 minutes without boiling.
- Off the heat, gradually add the shredded cheddar cheese, stirring until fully melted and adjust the seasoning as necessary.
- Serve hot, garnished with your favorite toppings.

For best results, use freshly shredded cheese and let the soup sit for 30 minutes after cooking to enhance flavors.
