A comforting bowl of hearty ham soup filled with diced ham, vegetables, and aromatic herbs, perfect for chilly evenings.
Ingredients

- 2 cups diced ham
- 1 cup chopped onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups potatoes, diced
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 bay leaf
- 2 cups kale or spinach (optional)
Instructions
- In a large pot, sauté the onions, carrots, and celery until softened.
- Add garlic and cook for another minute.
- Stir in the diced ham and cook for a few minutes.
- Pour in the chicken broth and add the potatoes, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until the potatoes are tender.
- If using, add kale or spinach and cook until just wilted.
- Remove bay leaf before serving.
Notes
For a thicker soup, mash some of the potatoes against the side of the pot to allow their starch to thicken the broth naturally.
