Description

A comforting bowl of hearty ham soup filled with diced ham, vegetables, and aromatic herbs, perfect for chilly evenings.


Ingredients

  • 2 cups diced ham
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups potatoes, diced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 bay leaf
  • 2 cups kale or spinach (optional)

Instructions

  1. In a large pot, sauté the onions, carrots, and celery until softened.
  2. Add garlic and cook for another minute.
  3. Stir in the diced ham and cook for a few minutes.
  4. Pour in the chicken broth and add the potatoes, thyme, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the potatoes are tender.
  6. If using, add kale or spinach and cook until just wilted.
  7. Remove bay leaf before serving.

Notes

For a thicker soup, mash some of the potatoes against the side of the pot to allow their starch to thicken the broth naturally.
