- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced

- 4 cups chicken broth
- 2 cups potatoes, diced

- 1 cup frozen peas
Instructions
- In a large pot, sauté the onion, carrots, and celery until softened.
- Add garlic and cook for another minute.
- Stir in the diced ham, chicken broth, potatoes, and thyme.
- Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
- Add frozen peas and cook for an additional 5 minutes.
- Season with salt and pepper to taste before serving.
Notes
For a creamier soup, use an immersion blender to puree a portion, leaving some vegetables intact for texture. If your soup is too salty, add a potato to absorb excess salt.
