- 1 lb ground beef (or ground turkey/chicken)
- 1 tbsp olive oil
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 4 medium potatoes (thinly sliced; Yukon Gold or sweet potatoes)
- 1 cup shredded cheddar cheese (sub Monterey Jack if desired)
- 1/2 cup grated Parmesan cheese (optional)
- 1 tbsp Italian seasoning
- 1 tsp paprika (optional: smoked paprika)
- Salt and pepper to taste
- 1 cup beef broth (or vegetable broth)
- 1/2 cup milk (optional for creaminess)
- Fresh parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add chopped onion and minced garlic. Sauté until tender and fragrant.
- Add the ground beef, breaking it up as it cooks. Season with salt, pepper, Italian seasoning, and paprika. Brown the meat thoroughly.
- Layer half of the sliced potatoes on the bottom of a greased baking dish. Pour half of the beef mixture over the potatoes and sprinkle half of the cheddar cheese on top.
- Repeat layers with the remaining potatoes, beef mixture, and cheese.
- Pour the beef broth evenly over the casserole and drizzle in optional milk.
- Cover with aluminum foil and bake for about 45 minutes. Remove foil and bake for another 15-20 minutes until potatoes are tender and cheese is bubbly.
- Garnish with fresh parsley before serving.
Notes
Let the casserole rest for a few minutes after baking for easier serving. You can prep it a day in advance and store it in the fridge.
