Description

Ingredients

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 4 medium potatoes (thinly sliced; Yukon Gold or sweet potatoes)
  • 1 cup shredded cheddar cheese (sub Monterey Jack if desired)
  • 1/2 cup grated Parmesan cheese (optional)
  • 1 tbsp Italian seasoning
  • 1 tsp paprika (optional: smoked paprika)
  • Salt and pepper to taste
  • 1 cup beef broth (or vegetable broth)
  • 1/2 cup milk (optional for creaminess)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add chopped onion and minced garlic. Sauté until tender and fragrant.
  3. Add the ground beef, breaking it up as it cooks. Season with salt, pepper, Italian seasoning, and paprika. Brown the meat thoroughly.
  4. Layer half of the sliced potatoes on the bottom of a greased baking dish. Pour half of the beef mixture over the potatoes and sprinkle half of the cheddar cheese on top.
  5. Repeat layers with the remaining potatoes, beef mixture, and cheese.
  6. Pour the beef broth evenly over the casserole and drizzle in optional milk.
  7. Cover with aluminum foil and bake for about 45 minutes. Remove foil and bake for another 15-20 minutes until potatoes are tender and cheese is bubbly.
  8. Garnish with fresh parsley before serving.

Notes

Let the casserole rest for a few minutes after baking for easier serving. You can prep it a day in advance and store it in the fridge.
