Delicious and nutritious veggie rolls filled with fresh vegetables and served with a creamy peanut sauce.

- 8 rice paper wrappers
- ½ cup shredded red cabbage
- 1 carrot, julienned
- 1 cucumber, julienned
- ½ avocado, sliced
- Fresh mint leaves
- Fresh cilantro leaves
- ¼ cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp maple syrup
Instructions
- Prepare the Ingredients. Begin by washing and preparing all the vegetables. Julienne the carrot and cucumber, and shred the red cabbage. Slice the avocado and set aside.
- Prepare the Rice Paper Wrappers. Fill a shallow bowl with warm water. Dip each rice paper wrapper into the water for about 10-15 seconds until pliable, then lay it on a clean surface.
- Assemble the Rolls. Start with a layer of shredded cabbage in the center of the wrapper. Add a small amount of each vegetable, along with a few mint and cilantro leaves.
- Prepare the Peanut Sauce. In a bowl, mix together the peanut butter, soy sauce, lime juice, and maple syrup until smooth and creamy.
- Serve and Enjoy. Roll the rice paper from the bottom up, folding in the sides as you go. Repeat until all rolls are assembled, then serve with the peanut sauce for dipping.
Notes
Experiment with additional fillings like bell peppers or cooked shrimp for a variety of flavors.
