Deliciously crunchy on the outside and tender on the inside, these easy-to-make pineapple fritters are coated in cinnamon sugar and evoke a taste of paradise.


Ingredients

  • 1 cup All-purpose flour (or gluten-free flour)
  • 1/4 cup Granulated sugar (or coconut sugar)
  • 1 tablespoon Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg (or flax egg)
  • 1/2 cup Milk (or dairy-free milk)
  • 1 whole Fresh pineapple (sliced into rings)
  • 2 cups Vegetable oil (canola or coconut oil)
  • 1 tablespoon Additional cinnamon and sugar (to taste)

Instructions

  1. Heat the oil in a large frying pan over medium heat.
  2. Whisk together the dry ingredients: flour, sugar, baking powder, salt, and ground cinnamon in a mixing bowl.
  3. Beat the egg in another bowl and add the milk. Mix well, then pour into the dry ingredients. Stir until just combined.
  4. Dip each pineapple ring into the batter, coating it thoroughly.
  5. Place the battered pineapple rings into the hot oil and fry for about 2-3 minutes on each side, until golden brown and crispy.
  6. Remove the fritters and place them on paper towels to drain excess oil.
  7. Dust with additional cinnamon and sugar mixture over the warm fritters, adjusting to taste.

Notes
