- 1 cup All-purpose flour (or gluten-free flour)
- 1/4 cup Granulated sugar (or coconut sugar)
- 1 tablespoon Baking powder
- 1/4 teaspoon Salt
- 1 teaspoon Ground cinnamon
- 1 large Egg (or flax egg)
- 1/2 cup Milk (or dairy-free milk)
- 1 whole Fresh pineapple (sliced into rings)
- 2 cups Vegetable oil (canola or coconut oil)
- 1 tablespoon Additional cinnamon and sugar (to taste)
Instructions
- Heat the oil in a large frying pan over medium heat.
- Whisk together the dry ingredients: flour, sugar, baking powder, salt, and ground cinnamon in a mixing bowl.
- Beat the egg in another bowl and add the milk. Mix well, then pour into the dry ingredients. Stir until just combined.
- Dip each pineapple ring into the batter, coating it thoroughly.
- Place the battered pineapple rings into the hot oil and fry for about 2-3 minutes on each side, until golden brown and crispy.
- Remove the fritters and place them on paper towels to drain excess oil.
- Dust with additional cinnamon and sugar mixture over the warm fritters, adjusting to taste.

For a vegan option, replace the egg with a flax egg. Adjust spices as desired for unique flavors.
