  • 2 large eggs
  • 1 teaspoon vanilla extract (5 ml)
  • 1 cup (240 ml) oat flour (120 grams)
  • 1/2 cup (120 ml) rolled oats (45 grams)
  • 1/4 cup (60 ml) protein powder (30 grams)
  • 1/2 teaspoon (3 ml) baking powder (2 grams)
  • 1/4 teaspoon (1 ml) baking soda (1 gram)
  • 1/4 teaspoon (1 ml) salt (1 gram)
  • 1/4 cup (60 ml) chocolate chips (45 grams)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the Greek yogurt, almond butter, honey, eggs, and vanilla extract to the mashed bananas.
  4. Whisk the wet ingredients together until well combined.
  5. In another bowl, mix the oat flour, rolled oats, protein powder, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Fold in the chocolate chips gently with a spatula.
  8. Pour the batter into the prepared baking pan, spreading it evenly.
  9. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  10. Remove from the oven and let cool in the pan for about 10 minutes.
  11. Transfer to a wire rack to cool completely before slicing.
  12. Cut into squares and serve.

Notes

  • Ensure ripe bananas are used for maximum sweetness and flavor.
  • Opt for creamy almond butter or classic peanut butter for a nutty taste.
