  • 4 cups low-sodium chicken broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup heavy cream or milk
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, stirring until softened, about 5-7 minutes.
  2. Incorporate the diced carrots and celery, cooking until they start to soften.
  3. Add the shredded chicken, followed by the chicken broth and frozen peas. Stir in dried thyme and rosemary.
  4. Bring the mixture to a simmer and allow it to meld.
  5. In a small bowl, whisk together the heavy cream or milk with the all-purpose flour until smooth. Gradually add this mixture to the pot, stirring continuously.
  6. Allow to simmer for an additional 10-15 minutes until thickened. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.
