- 1 lb lean ground beef
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 can tomatoes with juices (14.5 oz)
- 1 handful fresh basil or parsley (for garnish)
- 1 cup low-sodium beef broth
- 8 oz penne pasta (or similar short pasta)
- 1 tbsp Italian seasoning
- Salt and pepper (to taste)
- 1 tbsp olive oil
- ½ cup plain Greek yogurt
- ¼ cup grated parmesan cheese
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
- Add the minced garlic and lean ground beef to the skillet. Brown the beef, breaking it into small pieces as it cooks.
- Stir in the can of tomatoes and their juices with the beef mixture.
- Pour in the beef broth, sprinkle the Italian seasoning, and season with salt and pepper. Simmer this mixture for about 15 minutes, allowing the flavors to meld.
- Remove the sauce from the heat. Stir in the Greek yogurt and parmesan cheese until creamy.
- Combine the cooked pasta with the sauce, mixing well.
- Garnish with fresh herbs before serving.
Notes
Substitute short pasta shapes as preferred. Enhance flavors with red pepper flakes for added heat.
