Ingredients

  • 1 lb lean ground beef
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 can tomatoes with juices (14.5 oz)
  • 1 handful fresh basil or parsley (for garnish)
  • 1 cup low-sodium beef broth
  • 8 oz penne pasta (or similar short pasta)
  • 1 tbsp Italian seasoning
  • Salt and pepper (to taste)
  • 1 tbsp olive oil
  • ½ cup plain Greek yogurt
  • ¼ cup grated parmesan cheese

Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
  3. Add the minced garlic and lean ground beef to the skillet. Brown the beef, breaking it into small pieces as it cooks.
  4. Stir in the can of tomatoes and their juices with the beef mixture.
  5. Pour in the beef broth, sprinkle the Italian seasoning, and season with salt and pepper. Simmer this mixture for about 15 minutes, allowing the flavors to meld.
  6. Remove the sauce from the heat. Stir in the Greek yogurt and parmesan cheese until creamy.
  7. Combine the cooked pasta with the sauce, mixing well.
  8. Garnish with fresh herbs before serving.

Notes

Substitute short pasta shapes as preferred. Enhance flavors with red pepper flakes for added heat.
