Instructions

  1. Cook the pasta: Boil water in a large pot with a pinch of salt. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Brown the beef: In a skillet, heat olive oil over medium-high heat. Add diced onion and minced garlic, sautéing until golden brown. Add ground beef, breaking it apart, and cook until browned.
  3. Simmer the sauce: Incorporate canned tomatoes and beef broth into the beef mixture. Stir in Italian seasoning, salt, and pepper. Let simmer for about 10 minutes.
  4. Add the creamy element: Stir in Greek yogurt and grated parmesan cheese until the sauce is creamy and smooth. Adjust seasoning if needed.
  5. Combine with pasta: Add drained pasta to the skillet and toss until well-coated in the creamy beef sauce.
  6. Garnish & serve: Serve hot, topped with freshly chopped basil or parsley.

Notes

For a lighter version, substitute Greek yogurt with low-fat sour cream. Add red pepper flakes for heat or toss in vegetables like spinach or bell peppers.
