  • 1.5 tablespoons Cajun seasoning mix
  • 2 tsp olive oil
  • 1 medium red onion (chopped)
  • 45 garlic cloves (chopped)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 tsp chili powder
  • 250 ml milk
  • 150 g light cream cheese
  • 40 g Parmesan cheese
  • 25 g grass-fed butter for cooking
  • 15 g grass-fed butter (for sauce)
  • Fresh parsley (for garnish)

Instructions

  1. Begin by marinating the chicken breast pieces overnight with Cajun seasoning and olive oil. Ensure each piece has an even coating.
  2. Heat up a pan over medium-high heat and melt 25 g of grass-fed butter.
  3. Add the marinated chicken to the pan. Cook until it develops a crispy, golden crust.
  4. Let the chicken rest for a few minutes before slicing it into strips.
  5. Sauté the chopped red onion and garlic cloves in the same pan until fragrant.
  6. Add the remaining Cajun seasoning and toss in day-old rice, stirring until well coated with flavor.
  7. Lower the heat, melt the remaining butter, and then add the remaining Cajun seasoning.
  8. Whisk in the milk until warmed through, then add the light cream cheese and Parmesan. Stir until smooth.
  9. Layer the Cajun rice on a plate, top with sliced chicken, and drizzle the creamy sauce over the top.
  10. Garnish with fresh parsley for a vibrant touch.

Notes

Allow the chicken to come to room temperature before cooking for even cooking. Experiment with Cajun seasoning levels to find your preferred spice.
