Description

A comforting and nutritious soup that combines the flavors of traditional lasagna with lean proteins and fresh vegetables.


Ingredients

  • 2 cups cooked lasagna noodles, broken into pieces
  • 1 lb lean ground turkey or chicken
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chopped zucchini
  • 1 tsp Italian seasoning
  • 1 cup ricotta cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Shredded mozzarella cheese for serving
  • Grated Parmesan cheese for serving
  • Fresh basil for garnish

Instructions

  1. Brown the ground turkey or chicken over medium heat until golden and fully cooked.
  2. Add the chopped onion and minced garlic, stirring until the onion is soft and translucent.
  3. Pour in the chicken broth, tomato sauce, and diced tomatoes.
  4. Add the chopped zucchini and Italian seasoning; stir to combine.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Stir in the cooked lasagna noodles and cook until tender.
  7. Mix in the ricotta cheese until well combined.
  8. Serve hot, garnished with shredded mozzarella, Parmesan cheese, and fresh basil.
