Ingredients

  • 1 cup rolled oats
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 cup blueberries
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Mix together the cottage cheese, oats, eggs, honey or maple syrup, vanilla, baking powder, lemon zest, lemon juice, and salt until well combined.
  3. Gently fold in the blueberries.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 25-30 minutes or until the edges are golden and the center is set.
  6. Allow to cool slightly before slicing. Serve warm or store for meal prep.
