Ingredients

- 1 cup cottage cheese
- 1 cup rolled oats
- 2 eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 cup blueberries
- Zest of 1 lemon
- Juice of 1 lemon
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- Mix together the cottage cheese, oats, eggs, honey or maple syrup, vanilla, baking powder, lemon zest, lemon juice, and salt until well combined.
- Gently fold in the blueberries.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes or until the edges are golden and the center is set.
- Allow to cool slightly before slicing. Serve warm or store for meal prep.
Notes
For best results, use fresh blueberries; if using frozen, rinse and pat dry. Consider adding a sprinkle of cinnamon for extra flavor.
