- 1/3 cup (80 ml) honey (or maple syrup)
- 1/3 cup (80 ml) peanuts
- 1 1/3 cup (320 ml) s chocolate chips
- 2 tsp (10 ml) coconut oil
- Flakey sea salt
Instructions
- In a large mixing bowl, combine the yogurt, peanut butter, and honey, stirring until well blended. Use a cookie scoop to portion out roughly 3 tablespoons of this blend onto a parchment-covered baking sheet, arranging them in a cookie-like form. Flatten the tops with the back of a spoon or the scoop. Decorate each ‘cookie’ by placing 5 peanuts on top, then transfer them to the freezer for a 2-hour chill.
- In a small saucepan, gently heat the chocolate chips with the coconut oil on low, stirring continuously until completely smooth and melted. Swiftly coat each yogurt cookie in the melted chocolate or drizzle the chocolate over the tops. Sprinkle a pinch of flakey sea salt over each one, and return them to the freezer for an additional 20 minutes to set.
