- 110g oat flour*
- 125g smooth peanut butter**
- 3 tbsp (45 ml) maple syrup
- 2 tbsp (30 ml) coconut oil
- 1/2 tsp (3 ml) vanilla extract
- 1/4 tsp (1 ml) salt
- 40g dark chocolate chips
- 100g dark chocolate
- 2 tbsp (30 ml) smooth peanut butter**
Instructions
- Combine the oat flour and salt in a mixing bowl, then incorporate the peanut butter, coconut oil, maple syrup, and vanilla extract. Stir until well mixed, then gently fold in the chocolate chips.
- Spread the mixture evenly into a loaf pan lined with parchment paper. I used a 22×12 cm loaf pan. Chill in the refrigerator for 1 hour.
- Melt the ingredients for the topping using a double boiler or microwave, then drizzle over the top and allow to cool for several minutes.
- Place back in the fridge until the chocolate topping is firm.
- Cut into pieces and enjoy!
