Description

A comforting high protein soup featuring bell peppers, ground turkey or beef, and flavorful broth that warms the soul.


Ingredients

  • 4 bell peppers, diced
  • 1 lb ground turkey or beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup quinoa or rice (optional)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground turkey or beef over medium heat.
  2. Add the diced onion and minced garlic, and sauté until softened.
  3. Stir in the diced bell peppers, diced tomatoes, and broth.
  4. If using, add quinoa or rice.
  5. Season with Italian seasoning, salt, and pepper.
  6. Simmer until the vegetables are tender and meat is cooked through, approximately 20 minutes.

Notes

Garnish with fresh herbs or Greek yogurt for added flavor. Can be served with crusty bread.
