Description
A comforting hobo casserole that combines ground beef, potatoes, and cheese for a cozy family dish.
Ingredients

- 1.5 lbs ground beef (80/20 blend)
- 3 large Yukon Gold potatoes, sliced thin
- 2 large carrots, peeled and sliced
- 1 finely diced yellow onion
- 10.5 oz cream of mushroom soup
- 1 cup sharp cheddar cheese
- 1 tsp garlic powder
- 0.5 tsp smoked paprika
- 0.25 cup water or milk (for soup mixture)
Instructions
- Preheat oven to 375°F and grease a 9×13 inch baking dish.
- Brown the ground beef in a skillet over medium heat for 5-7 minutes; drain excess grease.
- Layer sliced potatoes at the bottom of the baking dish.
- Add the cooked ground beef on top of the potatoes.
- Spread sliced carrots and diced onion evenly over the ground beef.
- Whisk cream of mushroom soup with 0.25 cups of water or milk and pour over the layers in the dish.
- Cover with foil and bake for 45-50 minutes.
- After baking, sprinkle 1 cup of sharp cheddar cheese on top and bake uncovered for an additional 10 minutes.
- Serve and enjoy!
Notes
You can add additional vegetables like peas or corn for variety. Experiment with different cheeses for unique flavors.
