Description

A comforting hobo casserole that combines ground beef, potatoes, and cheese for a cozy family dish.


Ingredients

  • 1.5 lbs ground beef (80/20 blend)
  • 3 large Yukon Gold potatoes, sliced thin
  • 2 large carrots, peeled and sliced
  • 1 finely diced yellow onion
  • 10.5 oz cream of mushroom soup
  • 1 cup sharp cheddar cheese
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.25 cup water or milk (for soup mixture)

Instructions

  1. Preheat oven to 375°F and grease a 9×13 inch baking dish.
  2. Brown the ground beef in a skillet over medium heat for 5-7 minutes; drain excess grease.
  3. Layer sliced potatoes at the bottom of the baking dish.
  4. Add the cooked ground beef on top of the potatoes.
  5. Spread sliced carrots and diced onion evenly over the ground beef.
  6. Whisk cream of mushroom soup with 0.25 cups of water or milk and pour over the layers in the dish.
  7. Cover with foil and bake for 45-50 minutes.
  8. After baking, sprinkle 1 cup of sharp cheddar cheese on top and bake uncovered for an additional 10 minutes.
  9. Serve and enjoy!

Notes

You can add additional vegetables like peas or corn for variety. Experiment with different cheeses for unique flavors.
